Hello there!

I recently had the rare opportunity to bend the ear and pick the brain of a top class wedding cake designer who displayed some of her wonderful creations at one of our recent Wedding Open Days. It was too good an opportunity to miss, so I just delved in and got it from the horse’s mouth – this year’s top trends.

Soft pastels

Soft pastels are definitely an in-demand colour for weddings in 2015. Think soft lemon, pearl, pistachio, orchid tint. Looking at cakes on Pinterest, one idea that seems to be quite popular is choosing a different shade for each layer, creating a wedding cake with a colour gradient from light to dark.

FEATURED

Wedding cakes are no longer just elegant tiers of royal icing with simple or sugarpaste flowers. They’re statements, talking points and reflections of your personalities.

And as with everything in weddings, fashions come and go. Cakes are exciting.

Tiers are out… and then they’re in. And then it’s cheese, and then cheesecake, then cakes get naked, or half-naked, or everyone has cupcakes then towers of croquembouche… and bloggers say don’t bother with a wedding cake. What’s a bride and groom to do?! If there’s one thing writing the English Wedding Blog has taught me, it’s that cake is important to me. I’m a cake lover – and not just for my sweet tooth but for the beautiful, breathtaking wedding cake designs I get to see every single day. Call me lucky! 🙂

A confession first of all today everyone: I’ve been gazing at the images for this wedding blog post (possibly dribbling a little) for quite a long time. I should have been typing but a mixture of admiration and hunger stopped me in my tracks! My favourite! Au Naturale is a stack of Madagascan vanilla sponge filled with vanilla buttercream and fruity raspberry jam, with a long glossy red ribbon bow, which draped down the length of the cake creates a bold and striking focal point.

Designer Beth is modest about her wedding cakes, and I suspect she’s blushing already but I really do admire her creativity, attention to detail and the passion she pours into her wedding cakes business. One thing that has been out of our hands for the wedding is the cake – we decided we’d like a surprise and to be honest, didn’t really know where to start anyway! Wedding cakes are a minefield at the best of times. A friend and neighbour of Richard’s family, Gina, is absolutely ace at making cakes, and when she offered to make ours as our wedding present – how could we refuse!

I made a cake inspiration board for her along the lines of ivory and black and left her to her own devices! We’ve tasted her trial cake – and it was the most amazing cake I have ever eaten! I’ve never been keen on wedding cake and I don’t like icing, so instead of the traditional, our cake will be a chocolate ganache cake with a raspberry filling – all covered in rollable white chocolate! Oh yes oh yes.

Gina sent me a photo of the cake topper today – it is absolutely beautiful! Gina is a genius. Yes – that’s all icing! I’m baffled at how she does it.
