I asked Ruth, the lovely cheese specialist at The Fine Cheese Co. to tell us a little about herself. She worked for Caroline Castigliano, and has a knowledge of weddings as deep as her love of cheese…
“I have a passion for cheese. I have spent the last twelve years working with cheese in various different capacities. I fell into the cheese world quite by chance upon leaving London for a new life in the country after marriage to a market gardener. Luckily the market garden in question happened to be Daylesford, home at the time to celebrated cheese maker Joe Schneider. Being a huge fan of eating cheese, I thought I would try my hand at helping Joe to make cheese and a new career was born. Since then I have been a cheese mongress, a cheese wholesaler, a cheese buyer and just about any other job you can think of that starts with cheese.
“In my previous life in London, I worked for leading bridal designer Caroline Castigliano, managing her flagship store. In this role, I helped thousands of brides choose their perfect wedding dress.
“Putting together a cheese wedding cake is not as simple as you might think. Each cake must provide the stunning tiered effect of a traditional wedding cake but have a harmonised range of cheeses, so that your guests can enjoy a beautifully balanced cheeseboard after the wedding breakfast or at the evening revels. So not just any cheese will do! I have thought long and hard to bring you my perfect selections.”
